9th Hour beer will be available at our Lake Villa location soon. We are brewing but awaiting final approval to begin selling! Here are some of the brews we have created and sold at past events.
Bel Ringer - Belgian Tripel - 9.5% ABV, 32 IBU
This traditional Belgian beer is a complex blend of aromas and flavors that are produced by a unique yeast strain. Belgian candy sugar is added to this style of beer to help lighten the body and up the alcohol.
Bilingual Berliner - Berliner Weisse - 3.2% ABV, 4 IBU
This a light-crisp sour beer. This beer is purposely soured with lactobacillus bacteria. It is very light in color and alcohol. Feel free to mix in some raspberry syrup to offset some of the sourness and add a raspberry twist.
Brown vs. The Board - 5.6% ABV, 25 IBU
This is an American Brown Ale. Although this style has its roots in England, this beer is entirely American, brewed with Wisconsin malt from Briess Malting Co. and a variety of American hops such as Liberty, Columbus and Amarillo Gold. The flavor is often described as caramelly, toasty, biscuity with hints of roastiness. The hop bitterness is medium and is well balanced with the malty flavor of the beer.
Dreamer Mexican Dark Lager - 5.5% ABV, 28 IBU
This is an easy-drinking dark brown lager. It is similar to a Vienna Lager that has a nice malt backbone and a slight bit of roastiness. You can also enjoy it with a lime!
This cider is brewed with apple cider with a raspberry puree added in the secondary fermentation vessel. It has a nice blend of apples and raspberries in both the smell and the taste without being too sweet.
Early Study Break (E.S.B.) - 4.4% ABV, 29 IBU
This is an Extra Special Bitter. It is an English beer that has a good malt backbone balanced with a slight hop flavor and residual sweetness on the back end.
Emily’s Ale - Strawberry Blonde - 5.7% ABV, 20 IBU
Named after Dave’s wife Emily (yes, she is a strawberry blonde), this is a perfect refreshing beer to have on a summer day. It has a strong aroma of strawberries on the nose. Take a sip and you will taste the blend of the blonde base beer with the strawberries. The nice thing about this beer is you smell and taste the strawberries, and the finish is smooth with little sweetness.
Emily’s Cider - 5.7% ABV
This cider is named after Dave’s wife. It is our strawberry apple cider which is our cider answer for fans of our Emily’s Ale, which is a strawberry blonde ale. You might have guessed it: she is a strawberry blonde. This cider is brewed with apple cider with a strawberry puree added in the secondary fermentation vessel. It has a nice blend of apples and strawberries in both the smell and the taste. It is a cider that is easy to drink on a hot summer day with a very low amount of sweetness and a subtle, dry finish.
Extra Credit - 4.6% ABV, 17 IBU
This is a Cream Ale. It is a light, crisp, easy-drinking ale. The aroma and flavor both have subtle notes of malt and hops. Characteristic of cream ales, it is a pale straw color with brilliant, sparkling clarity. Considered a flavorful “lawnmower” beer, flaked corn is added to help give it a crisp, clean flavor. Ivy League IPA - 7.1% ABV, 48 IBU
This is a New England style IPA. Unlike a West Coast IPA, New England IPAs are cloudy. This style has a tropical and fruity aroma. The flavor has many citrus qualities, including notes of grapefruit, tangerine, pineapple and orange. It finishes with a smooth, almost creamy feel with a small amount of bitterness. This beer has a complex hop profile, including Cascade, Waimea, Citra, Mosiac Lupulin Powder and El Dorado Hop Oil.
Hallpass Hefeweizen - 5.0% ABV, 18 IBU
This wheat beer is a traditional Bavarian Hefeweizen that originates from Southern Germany. This beer is fermented with a specific yeast that produces both hints of banana and clove in the aroma and flavor. There is little to no hop bitterness, and it has an unfiltered and cloudy appearance. Another perfect beer to enjoy on a summer day. Prost!
Helles 101 - 5.0%, 18 IBU
This is a light, crisp, traditional German style beer. Its roots stem from Munich, Germany. Helles means “light” or “bright” in German, which characterizes the golden hue. Although similar to a pilsner, this style has a muted hop character and soft malty accent. It is a well- balanced, easy drinking beer that offers: a slight spicy, herbal aroma of the noble hop variety Hallertauer; subtle underlying malt sweetness; and delicate grain notes with enough bitterness to finish dry to your palate. Nobel Pils - Czech Pilsner - 5.4% ABV, 38 IBU
This an easy-drinking, crisp lager. This style is for the light beer drinker. It is brewed with Czech Saaz hops that help give it some bitterness and hop flavor.
Professor’s Porter - English Porter - 5.0% ABV, 22 IBU
This is a darker beer that has a slight roastiness to it. It is very smooth and well-balanced. Professor’s Porter is our most decorated, award-winning beer. The top award it received was 1st in its style and 3rd Best in Show out of 550 beers at the Schooner Homebrew Competition at the Great Lakes Beer Festival in 2015.
Pumpkin π - Pumpkin Ale - 7.1% ABV, 41 IBU
It is a well-balanced, complex beer. In addition to the pumpkin flavor, it has hints of cinnamon, graham cracker, vanilla, clove, nutmeg, and allspice. A great beer to enjoy all winter long.
School House Rocktoberfest - 5.3% ABV, 23 IBU
This is a classic German Oktoberfest. Brewed with only ingredients from Germany, this is a great beer to have in the fall. This beer has a malty aroma followed by a gentle malt flavor with a crisp, clean finish. It has a bright clarity with a copper-red color. Prost!
‘Tart’y to Class - Pomegranate or Cherry-Lime - 3.6% ABV, 4 IBU
This a sour Berliner weisse beer. This beer is purposely soured with lactobacillus bacteria. We started with the same base beer and added fruit puree into the kegs. The cherry-lime has fresh organic lime zest. Both have a combination of the fruit followed by a slight tartness that gets you in the back of the mouth.
Tree Farm Field Trip - Spruce-Tip Pale Ale - 4.7% ABV, 32 IBU
With spruce tips picked just down the road at Richardson’s Tree Farm in Spring Grove, this pale ale is very unique as you will notice a piney/earthy flavor with a slightly bitter finish.
Tropical Daydream IPA - 7.1% ABV, 48 IBU

Umlauts not Optional - 4.8% ABV, 26 IBU
This is our Kölsch. Early on in German class, you learn that umlauts (the two dots above certain letters) are not optional. This is a beer that new craft beer drinkers and seasoned drinkers can enjoy. It is a light, easy-drinking classic German beer.
Welcome Back Pater
This is a Belgian Patersbier. Hard to find outside of monasteries in Belgium, this is known as the monks "lawnmower beer." This beer is made by a second rinse of the grains after they brew a heavy beer, such as a tripel or quad. The residual sugars still in the grain are brewed as a separate beer that is more sessionable and allowed the monks to be attentive while doing chores.
